Coffee + Cookies = 44 Days of Holiday Cookies Day 6: Vermont (Canadian) Maple Cookies

Here I am, being all HELL YES COOKIES and COFFEE selfish. I apologise for that. I apologise to my dear Canadian friend Katy-Sue. You see, Ms Katy-Sue is not only Canadian, she’s also allergic to caffeine.  I canadaKNOW, right? OH CANADA!

Canadians LOVE their Tim Hortons donuts and COFFEE, but for Ms Katy-Sue, coffee is evil and deadly. While it would save my life, it would end hers. Or at least make her really, really uncomfortable and, perhaps, make her want to kill whomever fed her the dangerous substance.

This is why today’s Cookie is all bout Katy-Sue. Canadians, as much as they love Tim Hortons Donuts and Coffee, also love the maple leaf. And maple bacon. And maple syrup. So this, kids, this cookie is for my dear, dear coffee-avoiding Canadian friend, Katy Sue.

Vermont Maple Cookies (or CANADIAN MAPLE COOKIES) p 10/77 Betty Crocker Cooky Book

Oven 375F/ 190 C

  • ½ cup shortening                               1Tbsp maple flavouring
  • 1 ½ cups brown sugar (packed)          2 ¾ cups flour
  • 2 eggs                                               ½ tsp baking soda
  • 1 cup sour cream                               1 tsp salt

1 cup chopped nuts (optional)

Maple butter glaze:

Heat ½ cup butter until golden brown. Blend in 2 cups confectioner’s (icing) sugar and 2 tsp maple flavouring. Stir in 2-4 drops of hot water until icing spread smoothly.

Mix shortening, sugar and eggs thoroughly. Stir in sour cream and maple flavor. Combine all dry ingredients. Blend in with sugar mixture. Mix in nuts. Chill if dough is soft.

Drop rounded teaspoonfuls on greased baking sheet

Bake 10 minutes or until almost not imprint remains when touched.

Cool. Ice cookies with maple glaze when cooled.

Ordinarily I’d suggest a specific roast of coffee to accompany these delish beauties. Today I’mAnne suggesting a book: L.M Montgomery’s Anne of Green Gables because, you know, she’s Canadian, and it’s one of Katy-Sue’s favourites.
