Cookies + Coffee = 44 Days of Holiday Cookies Day 42: Peace, Love, And Coffee

coffeepeachIf you’re feeling a little less pep in your step, a little exhausted by all the holiday shopping frenzy, worn out by all the meal-planning and travelling and card writing, why not take a break? Why not sit down and have a few cookies and a really huge cup of coffee?

Go ahead.

You deserve it.

You really deserve it.

You deserve a break today, so get up and get away (anyone else hear an old McDonald’s jingle?) to the cookie jar and or local coffee house of your choice. Give yourself a gift this year. Have a cup of coffee because you KNOW coffee fixes everything. The Three Wise Men bought the infant Jesus, Mary and Joseph gists of frankincense, myrrh and gold and you KNOW that gold was coffee. Would I like about something like that?

Cinnamon Espresso Cookies (Because you can never have too much coffee with your coffee!) copied from a magazine recipe sometime back in the 90s.

Oven to 350F/175C

  •  2 ¼ cups flour                                               1 Tbsp ground cinnamon
  • 1 tsp baking soda                                            1/2 tsp salt
  • 1 ½ cups light brown sugar (packed)                1 cup unsalted butter, softened
  • 1 large egg                                                     4 tsp instant espresso powder
  • 2 tsp vanilla extract

Combine flour, cinnamon, baking soda, and salt.

In separate bowl, cream sugar, butter, egg, espresso powder, and vanilla.

Mix in dry ingredients. Drop by rounded spoonful onto cookie sheet lined with baking paper.

Bake 12 – 14 minutes
